George Sherman Union Food Hall Renovation

Union Court is located on the ground level of George Sherman Union, Boston University’s (BU) bustling hub for campus community. Our renovation transformed the multi-restaurant food hall with targeted interior improvements, enriching the way students share meals and connect with the campus community.
Regularly operating at maximum capacity, our design reorganized the 42,300 sf facility with targeted improvements that optimize patron flow. Open views and a more streamlined circulation path offer students easy access to seven distinct retail stations that were updated with new finishes. Reflecting student preferences, stations support both mobile and on-site ordering and feature convenient pick-up locations.

A refined design palette with graphic tiles, natural materials, modern lighting, and consistent signage unify the 910-seat facility and create a fresh, contemporary aesthetic. Seating options — including standing tables, cafe seating, banquettes, bar tables and stools, and lounge seating areas — provide students with a variety of environments for dining, studying and socializing.
Upgrades to the kitchen and back-of-house areas improved staff operations, helping to promote the quality, variety and great dining experiences for which BU’s Dining Services is renowned. Replacement of the plumbing infrastructure with new, efficient appliances support BU’s goals for campus sustainability and zero waste. The renovation scope also included installation of new sprinklers throughout the kitchen and food hall. The renovated Union Court welcomed students in September 2020.
